Choc. Chip Hearty Health Bites
These are my kids favorites. They are so delicious you just can’t have one. They are packed with fiber, and protein. No white sugar, just brown. This recipe is such a great alternative to the original cookie. Super satisfying for any age. I hope you enjoy these as much as our family and friends. I will tell you that when I make these, they don’t last long and not one goes to waste.
1 c. firmly packed brown sugar
3/4 c. butter
2 large egg whites- Egglands Best
2 t. pure vanilla extract- I like to use the Madagascar vanilla paste from William Sonoma
1- 15 oz. can chickpeas, drained and rinsed
2 c. (12 oz) semi-sweet chocolate chips
2 c. flour
1/2 c. old-fashioned oats
1 t. baking soda
1/4 t. salt
Pre-heat oven to 350 F. Get out 2 baking sheets.
In a large mixing bowl with an electric mixer, beat the sugar and butter on medium until smooth. Beat in the egg whites and vanilla. Add the chickpeas, and chocolate chips. Add the flour, oats, baking soda, and salt. Mix on low-speed until thick dough forms.
Drop the dough by the tablespoonful onto the baking sheets. I added 12 drops per sheet. Bake until the cookies are golden and brown. 11 to 13 minutes is perfect in most ovens. Don’t over bake. Transfer to a rack and cool.
Enjoy. They are addicting and yummy and much better for you then the original cookie!!!!
