Beachview chopped salad

This is a fresh chopped salad with ingredients taken from our favorite salads around.

serving size: 2

Ingredients:

lettuce- romaine, red leaf, butter, green leaf. Combo of any of these chopped- hearty portion chopped

cucumber- 1/2 cucumber

red pepper- 1/2 pepper

tomato- 1/2 tomato

avacodo- 1/2 avocado

red onion- 1/4 onion

pasta-1 cup

bacon- 6 slices

egg – 2 eggs

chicken- 1-2 small boneless breasts

feta cheese crumbles

dressing of your choice

chop next 5 ingredients after the lettuce. Make sure you give your veggies a good chop. The finer the better. Not too chunky.  Set aside in a bowl.

Cook pasta according to package and rinse under cold water.

Cook 6 slices of bacon and crumble and set aside along with veggies after it cools off.

Boil eggs and chill and use egg slicer to cut as you would egg salad and set aside.

Cook chicken. Sprinkle with salt and pepper. Grill or cook on stove top until cooked thru. Shred after its cooled a bit.

mix all ingredients together and toss with lettuce. Add your favorite dressing and some feta and pair with a pita slice or a piece of baguette.
